The “big brother” to the Europiccola. The hand pumped lever enables the user to control the espresso completely. By utilizing freshly ground beans, tamped firmly in to the filter basket the Professional is designed to make a traditional Italian style espresso. The design with the La Pavoni lever machine was developed in the 1950s, with little change since, and is often a design icon. Lifting the lever exposes a hole within the wall with the coffee group and the steam pressure inside the boiler pushes hot water on the coffee. Lowering the lever exerts pressure for the water within the coffee to ensure a complete extraction. After the lever is fully depressed it could possibly be lifted again for a couple of seconds to increase the volume of coffee in the cup. The Professional is designed being unbreakable also to last for most years. The boiler is constructed of brass, with chromium on the outside to boost its appearance also to minimise heat loss. The 1000 watt element and pressurestat system ensures that this steam pressure inside the boiler is kept at a constant 0.8 bars as indicated for the attractive pressure gauge. Heating time is 7 minutes. The professional is designed to make steam for Ten minutes without refilling the boiler
